This is essential to many dishes and is often an energy drain. We lift the lid and slowly cook and stir like people with normal ovens. You don't have to. Here is an easy way to sweat, sauté, soften or whatever you want to call it in your Oven and retain that precious energy.
You can use the Roasting Oven or Baking Oven, on the floor or on the rack.
- Gather up a pan with a loose fitting lid
- Cut the onions as needed
- Add a few teaspoons of fat,(butter, oil, lard etc), the veggies and a pinch of salt
- Stir the veggies around and with a heat resistant rubber spatula scrap down the sides of the pan pulling any onion away from the edge.

- On goes the lid and into the oven of your choice. Time will depend on size of onions and which oven you use. The hotter the oven the more attention they will need
