Steak Salad for Mother's Day

We are pretty lucky my wife and I. We have never been too caught up in Hallmark Holidays. Everyday is a good day to enjoy and appreciate each other. Good thing. That being said I still wanted to make a nice lunch for the mother of my child since he couldn't be here to cook for her.
I made a nice salad with some sliced iceberg, blanched broccoli, cashews and farro in an Asian style grapefruit vinaigrette. A quick marinade of some really good London Broil and we had the makings of a nice healthy lunch.
Lets see what I did
I took this nicely marbled piece of steak and cut out the silver connective tissue you see running down the middle, scored the meat in a diamond pattern and marinated in Chinese Goop for an hour or so. I used a vacuum bag to increase the penetration of the marinade. Cook anyway you like and let rest while you prepare the salad. Here's how we cook it Aga Style
Salad Time
- 1/2 cup farro covered with two inches of salted water simmered about 20- 25 minutes
- 1/2 head iceberg or other crisp lettuce thinly sliced
- 1 big head of broccoli blanched and chilled
- 1/2 cup crushed cashews, reserve some for garnish
- carrot ribbons or any other garnishes you want
- fresh cilantro leaves to taste, I like to use a lot
Mix it all together in bowl and make the dressing.
- juice of 1/2 a grapefruit
- 3 Tablespoon of Chinese Goop
- 3 Tablespoon veg oil
Mix it all together taste and season. I used a glass bowl to press the salad in and use as a mold. Sprinkle some cashews around the plate and add the sliced sirloin.
Why is my slicing knife long and skinny like a supermodel?
To get those lovely even slices of sirloin you need to use a slicing knife. Not a French knife or one of those fashionable Chinese fat knives that Rachael Ray uses. A sharp slicing knife where you slide the knife the full length of the blade is best. Do not use it like a saw, make long even slices. It's the key to becoming or dating a supermodel. Scout's honor.
