Free Lunch


Not really, there is no such thing as a free lunch. But I did manage to throw this together for lunch today. It took me 15 minutes and only cost $375.00. Cheap. Most of this came from my CSA, community supported agriculture, or from my FGL, friend's garden leftovers.

I steamed some little potatoes and then rummaged the fridge for veggies. I made a quick dressing in a ball jar, 3 parts oil, 1 part vinegar, a little mustard, garlic, herbs, lemon and white wine. Shake and serve.

I cut some corn off the cob and seasoned with lemon and chives. I steam all my green beans when I get them so I just grabbed a few, had lettuce washed and ready. Chunked up some cukes, carrots and a fat tomato. By now my potatoes are cooked. I cool them a bit in cold water, split and toss with a little dressing. Open a can of locally raised free range organic, carbon neutral tuna and lunch is served.

Yes, I have mad knife skills but you can easily throw together a simple lunch like this. Just keep lots of fresh veggies in your house. Wash and bag your greens, blanch veggies ASAP and keep fixin's around for salad dressing.
