Oatmeal & Blueberry Pancakes


Sunday morning stick to your ribs summertime breakfast

I eat a lot of oatmeal in the 9 months we call winter. The 3 months of pre-winter are a struggle to keep up with my favorite cheap food. This seems to fit the bill. It's pretty much oatmeal in flapjack form. Pancake cookery is easy on an Aga. Lay a piece of Bak-o-glide over the Simmer Plate and you are ready, no pan to clean up, no temperature to adjust.

If you plan on doubling this recipe no need to add another egg, one will work fine.

check out the milk bottle from my hometown, I found it at an antique store in Alaska

 

Oatmeal Blueberry Pancakes makes 5 nice cakes

  • 1 cup oatmeal
  • 1 cup milk
  • 2 T. brown sugar
  • 1 egg
  • 1 Tablespoon vegetable oil
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • pinch salt
  • fresh cinnamon
  • pinch of cayenne if you like a little kick
  • 1 cup fresh blueberries

Mix oatmeal sugar and milk together  and soak overnight. It's easy. You should be thinking about breakfast before you go to bed so just do it before you hit the sack.

Mix flour, salt, cinnamon, baking powder and cayenne together

Crack egg and add the oil into oatmeal milk mixture and blend well

Add flour mixture and fold until well combined

Fold in blueberries

Cook as usual for pancakes

Bak-o-glide magic, Vermont butter and maple syrup could make a shoelace palatable
