Spinach & Strawberry Salad

Sometimes life is just cruel in Vermont. I had my mind set on this salad about a week ago. My wife's book club was meeting at our house and this was going to be the star of a simple meal cooked on grill. Aga owners please forgive me. Well it turned out to be 55 and rainy again. No grilling but the salad was in the pipeline. No stopping it now. Fresh spinach from my CSA, local strawberries sweet and tart with a whole milk yogurt & poppy seed dressing. I punctuated the salad with red onions marinated in cider vinegar and ice cubes to reduce the sharp acrid flavor that can overpower these softer flavors.

Serves 4 for lunch 8 for dinner

  • 1/2 lb fresh spinach
  • 1/2 red onion juillienne (sliced real thin) see photos below
  • 1 qt fresh strawberries quartered
  • 1 Tablespoon poppy seeds toasted in a dry pan for a minute
  • 1 clove garlic smashed and finely diced
  • 2/3 cup yogurt, I prefer the whole milk to the fat free but it's your life
  • juice and zest of 1/4 orange
  • 1/4 cup good vinegar
  • handful of ice cubes

Juilliene the red onion and put in a bowl with the ice cubes, vinegar and a pinch of salt

Wash, hull and quarter the strawberries, don't be wasteful and just flat cut across the top of the strawberry

Pick and wash the spinach

Mix the yogurt, poppy seeds, garlic, orange juice and zest and a pinch of S&P together. Taste.

Drain the vinegar and discard all the ice cubes from the red onion

In a large bowl mix everything together. Voila! Salad


Juilliene Onions Like a Pro

Take out the middle section and then divide into pieces that are easy for you to handle

Slice the sections into nice thin pieces. Take the middle piece and really angle the knife in towards you to make the slices a little thinner because the sections in the middle are thicker. Notice I keep my finger tips in and guide the knife over my knuckles. It's harder than it looks
