Oatmeal & Blueberry Pancakes

Sunday morning stick to your ribs summertime breakfast

I eat a lot of oatmeal in the 9 months we call winter. The 3 months of pre-winter are a struggle to keep up with my favorite cheap food. This seems to fit the bill. It's pretty much oatmeal in flapjack form. Pancake cookery is easy on an Aga.

If you plan on doubling this recipe no need to add another egg, one will work fine.

  • fresh cinnamon
  • pinch of cayenne if you like a little kick
