Double Espresso Chocolate Torte

Super simple is how I like my baking. Six ingredients and a minimum of skill, right up my alley. Start with quality chocolate, quality butter and quality eggs. Season with quality coffee (which I happen to have in spades), dust with a little flour and I have all the makings of a first class cake or torte. Torte is a fancy name for a cake that uses quality ingredients. A torte is a cake but not all cakes are tortes. Simple enough.

Melting chocolate is easy in/on an Aga. The smaller the pieces of chocolate and butter the faster it will melt according to Chef Obvious. If you have the time put it in a bowl on the back of the oven, takes an hour or so, stir every 15 minutes. In a hurry? Put in a big bowl and into the Simmer Oven stirring every 5 minutes or so. Should be ready in 15 minutes. Patience is a virtue.

I was in no hurry and let these big chunks melt while I watched DowntonMelt some chocolate, whip some eggs and fold in some flour. Easy breezy if you know the order and the portions but first gather up a nice deep cake pan, electric mixer with wisk attachment and preheat your oven to 350, just kidding.

Let's see how this went down in the Agakitchen.

  • 1 lb of very good chocolate, I went with a 70% Lindt for the photo shoot
  • 1/2 lb of very good butter, no salt. Did you know salted butter is lower quality, the salt hides the imperfections. 
  • 1/2  cup brewed coffee or espresso, stronger the better. Not so strong the bitter takes over.
  • 8 high quality eggs
  • 1 cup basic sugar, no need to stress quality here, it's all pretty much the same s**t
  • 2 T finely ground high quality coffee /espresso beans
  • pinch of salt
  • 1/2 cup sifted flour 

Melt chocolate, butter and brewed coffee /espresso

Whip eggs, sugar, ground coffee /espresso and salt 5 minutes on high speed or until double in volume.

Add some chocolate into egg mixure and fold

Add folded chocolate and eggs into remaining chocolate and fold thoroughly

Fold in sifted flour

Into a greased cake pan, tap on counter to remove air pockets

Into Baking Oven for 30 minutes

Then Into Simmer Oven for 10 minutes

Let cool thouroughly, over nite is best

Serves 12 and freezes well.
